Cashew Pumpkin Bread

This pumpkin bread is full of flavor and easy to make. It's perfect for breakfast or have a slice with a salad.

Cashew Pumpkin Bread

1 2/3 c. all purpose flour
1 tsp. cinnamon
1/2 tsp. ginger
1/2 tsp. nutmeg
1/2 tsp allspice
1/2 tsp. salt
1 1/4 tsp. baking soda
1/8 tsp. cream of tartar
1/2 c. margarine, softened
1 1/3 c. brown sugar, packed
2 eggs
1 c. canned or homemade pumpkin puree
1/3 c. lowfat milk
1/3 c. chopped cashews

  • Coat a loaf pan with non-stick cooking spray
  • In one bowl, combine the first 8 ingredients and mix well
  • In another bowl, combine margarine, brown sugar, eggs, pumpkin and milk.
  • Combine ingredients in both bowls, mixing well, and stir in nuts
  • Pour in loaf pan and bake at 350 degress for an hour
